Prepare the Beans
In a small saucepan, heat the black beans over medium heat until warmed through. Season with salt and pepper to taste.

Cook the Eggs
In a non-stick skillet, heat olive oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny (about 2-3 minutes for over easy).

Prepare the Salsa
Dice the tomatoes and finely chop the serrano chili (remove seeds for less heat). Combine them in a bowl and season with salt and pepper.

Warm the Tortillas
In a dry skillet, warm the tortillas on both sides until pliable.

Assemble the Dish
On each tortilla, place a portion of the warmed black beans. Top with the cooked egg, followed by the tomato and chili salsa.

Serve immediately with additional salt, pepper, or hot sauce if desired.
