Cooking Instructions

  1. 1

    Prepare the Broth

In a saucepan, heat the vegetable broth over low heat. Keep it warm throughout the cooking process.

  2. 2

    Sauté the Aromatics

In a large skillet, heat olive oil over medium heat. Add the chopped shallots and cook until translucent, about 2-3 minutes. Stir in the minced garlic and cook for an additional minute.

  3. 3

    Toast the Rice

Add the Arborio rice to the skillet and stir to coat it with the oil. Cook for about 2 minutes until the rice is lightly toasted.

  4. 4

    Deglaze with Wine

Pour in the white wine and cook until it has mostly evaporated, stirring frequently.

  5. 5

    Add Broth Gradually

Begin adding the warm vegetable broth, one ladle at a time, stirring constantly. Allow the rice to absorb the broth before adding the next ladle. Continue this process for about 15-20 minutes until the rice is creamy and al dente.

  6. 6

    Incorporate Vegetables

When the rice is almost done, stir in the chopped asparagus, English peas, and fava beans. Cook for an additional 5 minutes until the vegetables are tender.

  7. 7

    Finish the Risotto

Remove the skillet from heat and stir in the grated Parmigiano-Reggiano. Season with salt and black pepper to taste.

  8. 8

    Serve

Spoon the creamy risotto into bowls and garnish with extra Parmigiano-Reggiano if desired. Enjoy your meal!
