    Prepare the vegetables

    Slice the delicata squash into thin rings, clean and slice the shiitake mushrooms, and wash the baby spinach.

    Prepare the branzino

    Clean the branzino, removing any scales and guts. Rinse under cold water and pat dry.

Cooking

    Cook the vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the delicata squash and sauté for about 5 minutes. Add shiitake mushrooms and continue to cook for another 5 minutes. Finally, add the baby spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.

    Cook the branzino

    In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Place the branzino in the skillet and cook for about 5-6 minutes on each side, or until the fish is cooked through and flaky.

    Make the truffle mushroom sauce

    In a small saucepan, add the garlic and sauté until fragrant. Pour in the vegetable broth, soy sauce, and truffle oil. Let it simmer for about 3-4 minutes until slightly thickened. Season with salt and black pepper.

    Plate the dish

    On a plate, arrange the sautéed vegetables, place the cooked branzino on top, and drizzle with the truffle mushroom sauce.
