Cooking Pasta

    Boil Water

    In a large pot, bring 4 quarts of salted water to a rolling boil.

    Cook Pasta

    Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, reserve 1 cup of pasta water, then drain the pasta and set aside.

Preparing Vegetables

    Chop Vegetables

    While the pasta is cooking, chop the bell peppers, zucchini, carrots, and broccoli into bite-sized pieces. Halve the cherry tomatoes.

Making the Sauce

    Heat Olive Oil

    In a large skillet, heat the olive oil over medium heat.

    Sauté Garlic

    Mince the garlic and add it to the heated oil, cooking for about 1 minute until fragrant.

    Add Vegetables

    Add the chopped vegetables to the skillet and sauté for about 5-7 minutes, or until they are tender but still crisp.

    Season

    Season the vegetables with salt and black pepper to taste.

Combining Ingredients

    Combine Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables.

    Add Reserved Pasta Water

    Gradually add the reserved pasta water, a little at a time, to help create a light sauce.

    Finish with Cheese

    Sprinkle in the Parmesan cheese and toss everything together until well combined.
