Preparing the Marinara Sauce

    Cook the garlic

    In a medium saucepan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add the tomatoes and seasonings

    Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer.

    Simmer the sauce

    Reduce heat to low and let the sauce simmer for 20-25 minutes, stirring occasionally. Add fresh basil just before serving.

Preparing the Calamari

    Prepare the batter

    In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

    Soak the calamari

    Place cleaned calamari rings in a separate bowl and pour over the buttermilk. Let soak for at least 10 minutes.

    Heat the oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the calamari

    Remove calamari from the buttermilk and allow excess to drip off. Dredge rings in the flour mixture, making sure they are well coated.

    Fry the calamari

    Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

    Serve

    Serve the fried calamari hot with marinara sauce on the side for dipping.
