Method

Cooking Pasta

    Boil Water

    Fill a large pot with water and bring it to a rolling boil over high heat.

    Add Salt

    Once the water is boiling, add 1 tablespoon of salt to the water. This will enhance the flavor of the pasta.

    Cook Pasta

    Add 200 grams of pasta to the boiling water. Stir occasionally and cook according to package instructions until al dente, usually around 8-10 minutes.

    Drain Pasta

    Once cooked, reserve a cup of pasta water for later and then drain the pasta using a colander.

    Toss with Olive Oil

    Return the drained pasta to the pot and drizzle with 1 tablespoon of olive oil. Toss to coat evenly.

Making Sauce

    Prepare Garlic

    Peel and finely chop 3 cloves of garlic.

    Cook Garlic

    In a pan, heat a splash of olive oil over medium heat. Add the chopped garlic and sauté for about 1 minute until fragrant, but not browned.

    Add Tomatoes

    Pour in the 400 grams of canned tomatoes, include the juice. Stir to combine.

    Season the Sauce

    Add 1 teaspoon of salt and 1 teaspoon of black pepper to the tomato mixture. Allow to simmer for 10-15 minutes, stirring occasionally.

    Add Basil

    Tear the basil leaves and add them to the sauce. Stir and let cook for an additional 2 minutes.

    Finish Sauce

    Taste and adjust seasoning if necessary. If the sauce is too thick, add a little reserved pasta water.

Combining

    Combine Pasta and Sauce

    Add the cooked pasta to the sauce pan and toss to combine, allowing the pasta to soak up some sauce.

    Serve

    Plate the pasta and sauce mixture. Grate 50 grams of Parmesan cheese over the top before serving.
