    Roasting the Beets

    Preheat your oven to 400°F (200°C).

    Wash the heirloom beets under running water to remove any dirt. Trim the tops and roots.

    Place the beets on a large piece of aluminum foil. Drizzle with olive oil, and sprinkle with salt and black pepper.

    Wrap the foil tightly around the beets to create a packet. Place the packet on a baking sheet.

    Roast in the preheated oven for 45-60 minutes, or until a fork easily pierces the beets.

    Remove from the oven, unwrap, and let cool slightly. Once cool enough to handle, peel the skins off the beets using your hands or a paper towel.

    Cut the beets into wedges or slices, and set aside.

Salad Assembly

    Combining Ingredients

    In a large bowl, combine the roasted beet slices, halved grapes, crumbled feta cheese, and chopped pistachios.

    Add the chopped fresh mint for a burst of flavor.

    Drizzle the balsamic vinegar over the salad and gently toss to combine all ingredients.
