Preparation

  1. 1

    Prepare the Ingredients

Wash the heirloom tomatoes and fresh peaches under cold water. Pat dry with a paper towel.

  2. 2

    Slice the Tomatoes and Peaches

Cut the heirloom tomatoes into wedges and the peaches into thin slices. Set aside in separate bowls.

  3. 3

    Toast the Almonds

In a dry skillet over medium heat, add the almonds and toast them for about 3-4 minutes, stirring frequently until golden brown. Remove from heat and let cool.

Assembly

  1. 4

    Arrange the Salad

On a serving platter, arrange the tomato wedges and peach slices in an alternating pattern.

  2. 5

    Add Burrata and Prosciutto

Tear the burrata cheese into pieces and place it in the center of the tomatoes and peaches. Drape the prosciutto slices around the burrata.

  3. 6

    Drizzle Dressing

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper. Drizzle this mixture over the salad.

  4. 7

    Add Toasted Almonds and Basil

Sprinkle the toasted almonds over the salad and add fresh basil leaves for garnish.
