Preparation of Fruit

    Wash and Prepare Apricots

    Rinse the apricots under cold water to remove any dirt. Cut each apricot in half and remove the pits. Chop the apricots into small pieces and measure out 2 cups.

Cooking the Preserve

    Combine Ingredients

    In a large pot, combine the chopped apricots, granulated sugar, lemon juice, and fruit pectin. Mix well to ensure the sugar and pectin are evenly distributed.

    Cook the Mixture

    Place the pot over medium heat and bring the mixture to a boil, stirring constantly. Once it reaches a rolling boil, continue to cook for 1-2 minutes.

    Check for Consistency

    After boiling, remove from heat and check the consistency of the preserve. If desired, add vanilla extract for extra flavor and stir well.

Canning the Preserve

    Prepare Jars

    Sterilize canning jars and lids by boiling them in water for 10 minutes. Remove and let dry.

    Pour the hot apricot preserve into the sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rim of the jars with a clean cloth to remove any residue.

Cooling and Storing
