Steak Preparation

    Season the Steak

    Pat the aged prime NY steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steak

    Heat olive oil in a cast-iron skillet over medium-high heat. Once hot, add the seasoned steaks to the skillet. Sear for 4-5 minutes on each side for medium-rare. Adjust cooking time for desired doneness.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing.

Parsnip and Potato Mash

    Prepare the Vegetables

    Peel and chop the parsnips and Yukon Gold potatoes into even-sized pieces.

    Boil the Vegetables

    In a large pot, add the chopped parsnips and potatoes. Cover with cold water, add 1 tsp of salt, and bring to a boil. Cook for 15-20 minutes until tender.

    Mash the Vegetables

    Drain the vegetables and return them to the pot. Add butter, heavy cream, remaining salt, and black pepper. Mash until smooth and creamy.

Truffle Butter Preparation

    Make Truffle Butter

    In a small bowl, combine unsalted butter, truffle oil, and chopped fresh chives. Mix well until combined.

    Serve the Truffle Butter

    Place the truffle butter on top of the rested steaks before serving, allowing it to melt into the meat.
