Tofu Preparation

    Press the Tofu

    Begin by pressing the firm tofu to remove excess moisture. Place the tofu between two plates and place a heavy object on top for about 15-20 minutes.

    Cut and Marinate

    After pressing, cut the tofu into small cubes. In a bowl, combine olive oil, soy sauce, ground cumin, paprika, garlic powder, salt, and black pepper. Add the tofu cubes and toss to coat. Let it marinate for at least 10 minutes.

    Fry the Tofu

    Heat a skillet over medium heat. Add the marinated tofu cubes and fry for about 8-10 minutes, turning occasionally until golden brown and crispy. Remove from heat and set aside.

Vegetable Filling

    Sauté Spinach and Scallions

    In the same skillet used for the tofu, add the fresh spinach and chopped scallions. Sauté for about 3-4 minutes until the spinach is wilted and the scallions are tender.

Taco Assembly

    Warm the Tortillas

    In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Assemble the Tacos

    Take a warm tortilla and add a portion of the fried tofu, sautéed spinach, and scallions. Top with salsa and guacamole. Repeat with the remaining tortillas.

    Serve

    Serve the tofu tacos immediately while warm, with extra salsa and guacamole on the side if desired.
