Preparation of Garlic Aioli

Mix Ingredients
In a medium bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper. Mix well until smooth and creamy.

Taste and Adjust
Taste the aioli and adjust seasoning with more salt or lemon juice if desired. Cover and refrigerate until serving.
Preparing and Roasting Mushrooms

Preheat Oven
Preheat your oven to 200°C (400°F).

Clean Mushrooms
Wipe the mushrooms with a damp cloth to clean them. Remove the stems if desired.

Season and Toss
In a mixing bowl, toss the mushrooms with olive oil, salt, black pepper, and fresh thyme (if using). Ensure all mushrooms are well coated.

Roast Mushrooms
Spread the seasoned mushrooms in a single layer on a baking sheet. Roast in the preheated oven for about 20 minutes, or until golden brown and tender.
Assembling the Dish

Melt Swiss Cheese
Remove the roasted mushrooms from the oven and place them in an oven-safe dish. Top with Swiss cheese slices.

Broil
Place the dish under the broiler for 2-3 minutes or until the cheese is melted and bubbly. Keep an eye on it to prevent burning.

Serve
Remove from the oven and let it cool slightly. Serve warm with the garlic aioli on the side for dipping.
