Jam Preparation

Cook the Bacon
In a large skillet over medium heat, cook the bacon slices until crispy. Remove and place on paper towels to drain excess grease. Once cooled, chop the bacon into small pieces.

Prepare Shallots
In the same skillet, remove excess bacon grease, leaving about 1 tablespoon. Add the chopped shallots and sauté over medium heat for about 3-4 minutes until they become translucent.

Combine Ingredients
Add the chopped bacon, dried figs (chopped), brown sugar, balsamic vinegar, black pepper, and salt to the skillet with the sautéed shallots.

Simmer the Jam
Stir the mixture well and bring it to a simmer. Reduce the heat to low and let it cook for about 20-25 minutes, stirring occasionally until it thickens.

Cool the Jam
Once thickened, remove the skillet from heat and let the jam cool to room temperature.
Serving the Dish

Prepare the Plate
On a serving platter, spread a layer of the cooled bacon fig shallot jam.

Add Arugula and Cheese
Top the jam with fresh arugula and arrange slices of Cambozola cheese on top. You can also add additional black pepper or salt to taste.

Serve immediately as an appetizer or alongside crackers for a delightful tasting experience.
