Thousand Island Dressing Preparation

Mix the Dressing
In a bowl, combine the mayonnaise, ketchup, sweet pickle relish, vinegar, onion powder, garlic powder, salt, and black pepper. Whisk together until smooth and well combined. Taste and adjust seasoning as needed.
Sandwich Assembly

Prepare the Sandwich
Take two slices of rye bread and layer with half of the pastrami (or turkey or tempeh), half of the sauerkraut, and two ounces of Swiss cheese. Top with another slice of bread.

Grill the Sandwich
Heat a skillet or griddle over medium heat. Add a bit of butter or oil to the pan. Once hot, place the sandwich in the skillet and cook for about 3-4 minutes until golden brown. Flip and cook the other side for an additional 3-4 minutes until the cheese is melted and the bread is crispy.

Serve
Remove the sandwich from the skillet and let it cool for a minute. Cut in half and serve with the homemade thousand island dressing on the side.
