Burger Preparation

Form the Patties
In a bowl, combine the ground beef, salt, and black pepper. Mix gently until just combined and form into two patties.

Prepare the Onions
Slice the onion thinly.

Roasted Garlic Aioli

Roast the Garlic
Preheat your oven to 400°F (200°C). Place garlic cloves in a small piece of foil, drizzle with olive oil, and wrap tightly. Roast in the oven for about 20-25 minutes until soft.

Make the Aioli
In a bowl, squeeze out the roasted garlic cloves and mash them with a fork. Add mayonnaise, lemon juice, salt, and black pepper. Mix until smooth and well combined.
Assemble the Burger

Build the Burger
Toast the burger buns if desired. Place the cooked patty with melted brie on the bottom half of the bun. Top with caramelized onions and field greens. Spread a generous amount of roasted garlic aioli on the top half of the bun and place it on top to complete the burger.

Serve the Highbrow Burger immediately with your choice of sides.
