    Prepare the Chili

    In a bowl, mix together chili powder, paprika, cumin, salt, and black pepper. Rub this spice mixture evenly over the chili, ensuring it’s well-coated. Let it sit for about 15 minutes to absorb the flavors.

Cooking the Chili

    Cook the Chili

    In a large skillet over medium heat, sear the chili for about 5-7 minutes on each side until browned. Remove from heat and set aside.

Cheese and Jalapeños

    Sauté Jalapeños

    In the same skillet, add olive oil and heat over medium heat. Slice the jalapeños and add them to the skillet. Sauté for about 3-4 minutes until they are tender and slightly charred.

    Melt Cheese

    Once the jalapeños are sautéed, place the seared chili back into the skillet, top it with three chili gouda cheese, and cover with a lid. Allow the cheese to melt for about 2-3 minutes.

Spicy Mayo

    In a small bowl, combine mayonnaise, sriracha sauce, and lime juice. Mix until smooth and well combined. Adjust the spice level by adding more sriracha if desired.

    Once the cheese has melted, carefully transfer the chili to a serving plate. Drizzle the spicy mayo over the top and serve immediately with extra jalapeños on the side if desired.
