Pulled Pork

    Prepare the Pork

    Preheat your oven to 300°F (150°C). In a small bowl, mix salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper to create a rub. Rub this mixture all over the pork shoulder.

    Roast the Pork

    In a roasting pan, add apple cider vinegar and water at the bottom. Place the pork shoulder on a rack above it. Cover the pan tightly with aluminum foil and roast for about 4-5 hours until the pork is fork-tender.

    Shred the Pork

    Once cooked, remove the pork from the oven and let it rest for 30 minutes. Then shred the pork using two forks.

BBQ Sauce

    Make the BBQ Sauce

    In a saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, black pepper, and salt. Stir well and let it simmer for about 15 minutes until thickened.

    Combine with Pork

    Mix the shredded pork with the prepared BBQ sauce until well coated.

Pickling Jalapeños

    Prepare the Brine

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, stirring until sugar dissolves.

    Pickle the Jalapeños

    Slice the jalapeños into rings and place them in a jar. Pour the hot brine over the jalapeños and let them sit at room temperature for at least 30 minutes before serving.

Cole Slaw

    Prepare the Slaw

    In a large bowl, combine shredded cabbage and grated carrots.

    Make the Dressing

    In a separate bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

    Combine Slaw and Dressing

    Pour the dressing over the cabbage and carrots. Toss until well coated and refrigerate for at least 30 minutes before serving.

Sandwich Assembly

    Assemble the Sandwich

    Toast the burger buns if desired. Place a generous amount of the pulled pork on the bottom half of the bun. Top it with pickled jalapeños and a scoop of cole slaw. Place the top half of the bun on and serve.
