Crust Preparation

    Make the Pie Crust

    In a large bowl, whisk together the all-purpose flour and salt. Add the chilled, cubed butter and mix until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

    Chill the Dough

    Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Prepare the Filling

    In a large bowl, combine the fresh fruit, granulated sugar, cornstarch, cinnamon, lemon juice, and vanilla extract. Toss to coat the fruit evenly.

Assemble and Bake

    Roll Out the Crust

    Preheat the oven to 425°F (220°C). On a floured surface, roll out half of the chilled dough to fit your pie pan. Transfer it to the pan.

    Fill the Pie

    Pour the fruit filling into the crust, spreading it evenly.

    Top the Pie

    Roll out the second half of the dough and place it over the filling. Crimp the edges to seal and cut slits in the top to allow steam to escape.
