    Wash and Peel Potatoes

    Wash the Russet potatoes under cold running water to remove any dirt. Peel the potatoes using a vegetable peeler.

    Cut the Potatoes

    Cut the peeled potatoes into even slices, approximately 1/4 inch thick, and then cut those slices into fries. Aim for uniformity to ensure even cooking.

Frying

    Heat the Oil

    In a large, heavy-bottomed pot, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add a batch of the cut fries to the hot oil, being careful not to overcrowd the pot. Fry the potatoes for about 5-7 minutes, or until they turn golden brown.

    Drain the Fries

    Using a slotted spoon, remove the fried fries from the oil and place them on a plate lined with paper towels to drain excess oil.

    Season the Fries

    While the fries are still hot, sprinkle with salt and pepper (to taste) to ensure the seasoning sticks.

    Repeat the Frying Process

    Repeat the frying process with the remaining batches of fries until all are cooked.
