Prepare the Cheese
Cut mozzarella cheese into bite-sized cubes (about 1-inch each) if using a block. If using string cheese, simply cut them into thirds.

Bread the Cheese
Dip each piece of mozzarella in flour, shaking off excess, then into the eggs, and finally coat with breadcrumbs. Make sure each piece is thoroughly coated.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping in a breadcrumb; it should sizzle upon contact.

Fry the Bites
Carefully place the breaded mozzarella bites into the hot oil (do not overcrowd the pan). Fry for 1-2 minutes on each side, or until golden brown.

Drain and Serve
Once fried, remove the bites from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot.

Add Tomatoes and Spices
Pour in the crushed tomatoes and add oregano, basil, salt, pepper, sugar, and red pepper flakes. Stir well to combine.

Simmer the Sauce
Bring the sauce to a gentle simmer. Reduce heat to low and let it cook for about 20 minutes, stirring occasionally.

Adjust Seasoning
Taste the sauce and adjust seasoning if necessary, adding more salt, pepper, or sugar to balance flavors.

Once the sauce has thickened and flavors melded, serve warm alongside the fried mozzarella bites.
