Method

Preparing the Tartar Sauce

    Mix Ingredients

    In a bowl, combine 1 cup of mayonnaise, 2 tablespoons of finely chopped dill pickles, 1 tablespoon of finely chopped capers, 1 tablespoon of lemon juice, and 1 tablespoon of chopped fresh dill. Mix well.

    Season

    Add salt and black pepper to taste. Set aside in the refrigerator to chill while you prepare the fish.

Preparing the Cod

    Make the Batter

    In a large bowl, whisk together 1 cup of all-purpose flour, 1 cup of cornstarch, 1 teaspoon of baking powder, 1 teaspoon of salt, and 1 teaspoon of black pepper. Gradually whisk in 1 cup of cold sparkling water until smooth.

    Heat the Oil

    In a deep skillet or pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Cod

    Dip each piece of wild-caught Alaskan cod fillet in the batter, ensuring it's fully coated.

    Fry the Cod

    Carefully place the coated cod fillets in the hot oil, frying them in batches if necessary. Fry for about 4-6 minutes, or until golden brown and cooked through. Remove and drain on paper towels.

Assembling the Sandwich

    Toast the Buns

    Optional: Lightly toast the brioche buns in a skillet or toaster until golden.

    Layer Ingredients

    On the bottom half of each brioche bun, place a generous amount of shredded lettuce, a fried cod fillet, a few slices of red onion, and a dollop of the homemade tartar sauce.

    Complete the Sandwich

    Top with the other half of the brioche bun and serve immediately with additional tartar sauce on the side if desired.
