Prepare the Fish
Cut the fish fillets into sticks about 1 inch wide and set aside.

Set Up Breading Station
In three separate shallow dishes, place the flour in the first, beat the eggs in the second, and mix the breadcrumbs with salt, pepper, paprika, and garlic powder in the third.

Bread the Fish
Take a fish stick, coat it in flour, then dip it into the beaten eggs, and finally, roll it in the breadcrumb mixture. Place each breaded fish stick on a plate.

Fry the Fish Sticks
In a large skillet, heat the cooking oil over medium-high heat. Once hot, add the breaded fish sticks in batches, frying until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Potatoes
Wash and peel the potatoes, then cut them into thin strips, approximately 1/4 inch thick.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry with a clean towel.

Fry the Potatoes
In a large deep fryer or heavy pot, heat the cooking oil to 350°F (175°C). Carefully add the potato strips in batches, frying until golden and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt and pepper immediately.
