Prepare the potatoes
Wash and peel the russet potatoes. Cut them into fries about 1/4 inch thick.

Soak the fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Cook the bison
In a large saucepan over medium heat, add the ground bison. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Add the remaining ingredients
Stir in the diced tomatoes, kidney beans, chili powder, cumin, salt, black pepper, and water. Bring to a simmer.

Simmer the chili
Reduce the heat to low and let the chili simmer for 20-25 minutes, stirring occasionally, until thickened.

Assemble the dish
Place a generous portion of fries on a plate. Spoon the spicy bison chili over the fries, then sprinkle with shredded cheddar cheese.

Top the chili cheese fries with a dollop of sour cream and, if desired, sprinkle with chopped green onions.
