    Prepare the Potatoes

    Peel the potatoes and cut them into evenly sized chunks (about 1-2 inches).

    Boil the Potatoes

    Place the potato chunks in a large pot and cover with cold water. Add 1 tsp of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for about 15-20 minutes, until the potatoes are fork-tender.

    Drain and Mash

    Drain the potatoes in a colander and return them to the pot. Add 4 tbs of butter, 1 cup of milk, 1 tsp of salt, and 1 tsp of black pepper. Mash the potatoes using a potato masher or fork until smooth and creamy.

Gravy

    Make the Roux

    In a medium saucepan over medium heat, melt 4 tbs of butter. Once melted, add 1 cup of all-purpose flour. Stir constantly for about 2-3 minutes until the mixture is golden brown.

    Gradually whisk in 2 cups of chicken or vegetable broth, ensuring there are no lumps. Continue stirring until the gravy thickens, about 5-7 minutes.

    Add 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of garlic powder to the gravy. Stir to combine and adjust seasoning to taste. Cook for an additional 2-3 minutes.
