Method
Cake Preparation
Preheat the Oven
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, salt, and ground nutmeg.
Mix Wet Ingredients
In another bowl, combine the vegetable oil, large eggs, and vanilla extract. Whisk until well combined.
Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the grated carrots and optional add-ins (if using) such as chopped walnuts and raisins.
Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Cool the Cake
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
Frosting Preparation
Make the Frosting
In a mixing bowl, beat the cream cheese and unsalted butter together until smooth. Gradually add the powdered sugar and mix until well blended. Stir in the vanilla extract.
Frost the Cake
Once the cakes are completely cool, place one layer on a serving plate and spread a layer of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the cake with the remaining frosting.
Decorate (Optional)
You can decorate the cake with additional chopped walnuts or carrot decorations if desired.
