Crust Preparation

    Prepare the crust

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until well combined.

    Press the mixture firmly into the bottom of a 9-inch springform pan, ensuring it's evenly distributed. Bake in the preheated oven for 8-10 minutes or until lightly golden. Remove from the oven and let it cool.

Filling Preparation

    Prepare the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in granulated sugar and continue to beat until well combined.

    Add sour cream and vanilla

    Add sour cream and vanilla extract to the cream cheese mixture. Beat until fully incorporated.

    Incorporate eggs

    Add one egg at a time, mixing on low speed until just combined after each addition. Do not overmix.

    Gently fold in the all-purpose flour until just combined.

Baking

    Bake the cheesecake

    Pour the cream cheese filling over the cooled crust in the springform pan. Bake in the oven at 325°F (160°C) for 55-65 minutes or until the center is set but slightly jiggly.

    Turn off the oven and crack open the oven door, allowing the cheesecake to cool in the oven for about 1 hour. Then, remove from the oven and let it cool to room temperature.

Serving

    If desired, in a small saucepan over medium heat, combine sliced strawberries and strawberry jam. Heat until the jam is melted and coats the strawberries.
