Dough Preparation

Activate Yeast
In a small bowl, combine warm water (1.5 cups) and sugar (2 tbs). Sprinkle yeast (2 tsp) over the top and let it sit for about 5-10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Mix well.

Once the yeast is activated, add it to the flour mixture along with olive oil (2 tbs). Stir until a rough dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Mix Filling Ingredients
In a mixing bowl, combine ricotta cheese (1 cup), cooked and chopped spinach (2 cups), feta cheese (0.5 cup), black pepper (0.5 tsp), and garlic powder (1 tsp). Mix until well combined.

Preheat Oven
Preheat your oven to 375°F (190°C).

Shape Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Divide the dough into equal portions based on how large you want the individual fiddlers to be.

Fill Dough
Roll out each portion into a circle, place a generous spoonful of the filling in the center, and fold the dough over to create a half-moon shape. Pinch the edges to seal.

Prepare for Baking
Place the filled fiddlers on a baking sheet lined with parchment paper. Brush the tops with olive oil (2 tbs) and sprinkle with grated Parmesan cheese (0.5 cup).

Bake
Bake in the preheated oven for 20-25 minutes or until golden brown.

Garnish
Remove from the oven, and while still warm, sprinkle with chopped fresh parsley (2 tbs) for garnish.
