    Cook the Potatoes

    Place the Yukon gold potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat. Once boiling, reduce heat and simmer for about 15-20 minutes, or until fork-tender. Drain and let cool slightly before peeling.

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove bacon from the skillet, crumble, and set aside, leaving the drippings in the pan.

    Chop Vegetables

    Dice the red onion and celery. Once the potatoes are cool enough to handle, chop them into bite-sized pieces.

    In the same skillet with the bacon drippings, add the apple cider vinegar, Dijon mustard, sugar, salt, pepper, and olive oil. Stir to combine and heat over low heat until warm, about 2-3 minutes.

    In a large bowl, combine the chopped potatoes, diced onion, celery, crumbled bacon, and fresh parsley. Pour the warm dressing over the salad and toss gently until evenly coated.
