    Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick. Rinse the cut potatoes under cold water to remove excess starch.

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This step helps to make the fries crispier.
