Each person gets a choice of 1/2 chicken, ham or roast beef along with mashed potatoes, gravy, 2 vegetables, slaw, hot rolls and butter. All served in platters and bowls.

Prepare the Chicken
Roast the whole chickens in a preheated oven at 375°F (190°C) for about 1.5 hours or until golden brown and cooked through. Let rest before carving.

Prepare the Ham
Score the surface of the ham and place it in a roasting pan. Bake at 325°F (160°C) for about 2 hours, basting frequently, until heated through.

Prepare the Roast Beef
Season the roast beef with salt and pepper. Sear in a hot skillet on all sides, then roast in an oven at 350°F (175°C) for about 1.5 hours or until desired doneness. Let rest before slicing.

Boil the Potatoes
Peel and cut the potatoes into chunks. Boil in salted water until tender, about 20 minutes. Drain well.

Add Broth
Gradually whisk in the chicken broth, stirring constantly until the gravy thickens. Season with salt and pepper to taste.

Prepare the Green Beans
Trim the ends of the green beans and steam or boil until tender, about 5-7 minutes. Season with salt.

Prepare the Cabbage and Carrots
Shred the cabbage and grate the carrots. In a large bowl, combine both.

Make the Dressing
In a separate bowl, whisk together mayonnaise, vinegar, and sugar. Pour the dressing over the cabbage and carrots, and toss to combine.

Let the Dough Rise
Knead the dough on a floured surface for 5-10 minutes until smooth. Place in a greased bowl, cover, and let rise until doubled in size, about 1 hour.

Shape and Bake the Rolls
Divide the dough into small balls and place on a baking sheet. Let rise for another 30 minutes. Preheat oven to 375°F (190°C) and bake for 15-20 minutes until golden brown.

Soften the butter at room temperature or microwave gently. Serve alongside the rolls and other dishes.
