Method

Main Proteins

  1. 1

    Prepare the Chicken

Roast the whole chickens in a preheated oven at 375°F (190°C) for about 1.5 hours or until golden brown and cooked through. Let rest before carving.

  2. 2

    Prepare the Ham

Score the surface of the ham and place it in a roasting pan. Bake at 325°F (160°C) for about 2 hours, basting frequently, until heated through.

  3. 3

    Prepare the Roast Beef

Season the roast beef with salt and pepper. Sear in a hot skillet on all sides, then roast in an oven at 350°F (175°C) for about 1.5 hours or until desired doneness. Let rest before slicing.

Mashed Potatoes

  1. 4

    Boil the Potatoes

Peel and cut the potatoes into chunks. Boil in salted water until tender, about 20 minutes. Drain well.

  2. 5

    Mash the Potatoes

Add butter, milk, salt, and pepper to the drained potatoes. Mash until smooth and creamy. Adjust seasoning to taste.

Gravy

  1. 6

    Make the Roux

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 2-3 minutes until lightly golden.

  2. 7

    Add Broth

Gradually whisk in the chicken broth, stirring constantly until the gravy thickens. Season with salt and pepper to taste.

Vegetables

  1. 8

    Prepare the Green Beans

Trim the ends of the green beans and steam or boil until tender, about 5-7 minutes. Season with salt.

  2. 9

    Prepare the Carrots

Peel and slice the carrots. Steam or boil until tender, about 8-10 minutes. Season with butter and salt.

Coleslaw

  1. 10

    Prepare the Cabbage and Carrots

Shred the cabbage and grate the carrots. In a large bowl, combine both.

  2. 11

    Make the Dressing

In a separate bowl, whisk together mayonnaise, vinegar, and sugar. Pour the dressing over the cabbage and carrots, and toss to combine.

Hot Rolls

  1. 12

    Prepare the Dough

In a bowl, combine warm milk, yeast, and sugar. Let sit for 5 minutes. Add flour, salt, melted butter, and egg. Mix until a dough forms.

  2. 13

    Let the Dough Rise

Knead the dough on a floured surface for 5-10 minutes until smooth. Place in a greased bowl, cover, and let rise until doubled in size, about 1 hour.

  3. 14

    Shape and Bake the Rolls

Divide the dough into small balls and place on a baking sheet. Let rise for another 30 minutes. Preheat oven to 375°F (190°C) and bake for 15-20 minutes until golden brown.

Butter

  1. 15

    Serve the Butter

Soften the butter at room temperature or microwave gently. Serve alongside the rolls and other dishes.
