Place the country ham in a large pot and cover it with water. Let it soak for at least 12 hours to reduce the saltiness.

In a medium saucepan, combine brown sugar, honey, cloves, black pepper, and mustard. Stir in the pineapple juice if using. Bring to a simmer over medium heat until the sugar has dissolved and the mixture is smooth.

Baste the Ham
Every 30 minutes, remove the foil and baste the ham with the reserved glaze. This will help create a beautiful, caramelized exterior.
