    Pour the milk into a large pot and heat it over medium heat until it reaches approximately 190°F (88°C). Stir occasionally to prevent scorching.

    Once the milk has reached the desired temperature, remove it from the heat and add the white vinegar or lemon juice. Stir gently for about 30 seconds until the milk curdles.

    Let it Sit

    Cover the pot and let it sit for about 10 minutes to allow the curds to form.

    Strain the Curds

    Line a colander with cheesecloth and place it over a large bowl. Carefully pour the curdled milk into the colander to separate the curds from the whey.

    Rinse the Curds

    Rinse the curds under cold water to remove any residual whey and to cool them down. Gather the cheesecloth and gently press the curds to remove excess water.

    Transfer the curds to a mixing bowl and sprinkle with salt. Mix gently to incorporate the salt evenly.
