Main Ingredients

Method

Preparation

  1. 1

    Prepare the Breading

In one bowl, mix together the flour, cornmeal, paprika, garlic powder, salt, and black pepper. This will be your dry breading mixture.

  2. 2

    Prepare the Wet Mixture

In a separate bowl, whisk together the eggs and milk until well combined. This will be your wet mixture for the catfish.

  3. 3

    Prepare the Fillets

Rinse the catfish fillets under cold water and pat them dry with paper towels. This will help the breading stick better.

Cooking

  1. 4

    Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until it shimmers. This will take about 5-7 minutes.

  2. 5

    Coat the Fillets

Dip each catfish fillet into the wet mixture, allowing excess to drip off, then dredge in the dry mixture, ensuring an even coating.

  3. 6

    Fry the Fillets

Carefully place the coated fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Ensure not to overcrowd the pan.

  4. 7

    Drain and Serve

Once cooked, remove the fillets from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately.
