Marinate the Chicken
In a large bowl, combine the buttermilk, hot sauce, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Breading
In a separate bowl, mix the all-purpose flour, cornstarch, cayenne pepper, and salt. Stir until well combined.
Frying the Chicken

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Chicken
Remove the marinated chicken thighs from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.

Fry the Chicken
Carefully place the breaded chicken thighs into the hot oil. Fry for about 6-7 minutes on each side until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

Remove the fried chicken from the oil and place it on a wire rack or paper towels to drain excess oil.

Spread ranch dressing on the bottom half of each brioche bun. Place the fried chicken on top of the ranch dressing. Add shredded lettuce, sliced tomatoes, and pickles. Top with the other half of the bun.
