Spaghetti Carbonara Recipe

Cooking Pasta

    Boil Water

    Fill a large pot with water, add 1 tablespoon of salt, and bring it to a boil over high heat.

    Cook Spaghetti

    Once the water is boiling, add the spaghetti and cook according to the package instructions until al dente (usually around 8-10 minutes).

    Reserve Pasta Water

    Before draining the spaghetti, reserve about 1 cup of the pasta cooking water.

    Drain Pasta

    Drain the spaghetti in a colander and set aside.

Preparing Sauce

    Cook Pancetta

    In a large skillet over medium heat, add the pancetta and cook until it is crispy, about 5-7 minutes. Remove from heat.

    Prepare Egg Mixture

    In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

    Garlic Sauté

    Finely chop the garlic and add it to the skillet with the pancetta. Turn the heat back on to low and cook for about 1 minute until fragrant.

Combining Ingredients

    Mix Pasta and Sauce

    Add the drained spaghetti to the skillet with the pancetta and garlic. Toss to combine.

    Add Egg Mixture

    Remove the skillet from heat. Quickly pour the egg and cheese mixture over the hot pasta, tossing vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Serve

    Taste and adjust seasoning with more black pepper if needed. Serve immediately with additional Parmesan cheese on top, if desired.
