Method
Preparing the Tempura Fried Shrimp

Make the Tempura Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and cold water until smooth. The batter should be light and slightly runny.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C).

Fry the Shrimp
Dip the shrimp into the tempura batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 2-3 minutes. Remove and let drain on paper towels.
Making the Chili Glaze

Combine Ingredients
In a small saucepan, mix together chili paste, soy sauce, honey, and lime juice. Heat over low heat until warmed and combined, stirring occasionally.
Preparing the Napa Slaw

Mix the Slaw
In a large bowl, combine shredded napa cabbage, grated carrot, rice vinegar, sesame oil, and salt. Toss well to combine and set aside to marinate for at least 10 minutes.
Making the Soy Citrus Dressing

Combine Dressing Ingredients
In a small bowl, whisk together soy sauce, orange juice, lime juice, and honey until well combined.
Assembling the Tacos

Prepare Taco Shells
Warm the taco shells or tortillas in a dry skillet over medium heat for about 30 seconds on each side.

Build the Tacos
Place a few pieces of fried shrimp in each taco shell, top with napa slaw, drizzle with chili glaze, and finish with a drizzle of soy citrus dressing. Garnish with chopped cilantro.

Serve the shrimp tacos with lime wedges on the side for squeezing.
