Cheesy Grits

Tomato & Andouille Sausage Gravy

Method

Cheesy Grits

  1. 1

    Prepare the Grits

In a large pot, bring the water and milk to a boil over medium heat. Stir in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally until thickened.

  2. 2

    Add Cheese and Seasoning

Once the grits are cooked, stir in the butter, cheddar cheese, salt, and black pepper until smooth and creamy. Keep warm until ready to serve.

Tomato & Andouille Sausage Gravy

  1. 3

    Sauté the Sausage

In a skillet, heat olive oil over medium heat. Add the andouille sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.

  2. 4

    Cook the Vegetables

In the same skillet, add diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 1-2 minutes.

  3. 5

    Create the Gravy

Stir in the canned diced tomatoes, chicken broth, paprika, cayenne pepper, salt, and black pepper. Bring to a simmer and cook for 10 minutes. Add the cooked sausage back into the skillet and simmer for another 5 minutes.

  4. 6

    Finish with Green Onions

Stir in the sliced green onions just before serving.

Side House Salad

  1. 7

    Prepare the Salad

In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, and red onion.

  2. 8

    Make the Dressing

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper.

  3. 9

    Toss the Salad

Drizzle the dressing over the salad and toss to combine. Serve immediately.
