Prepare the Pork
Preheat your oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels. Season it with salt, black pepper, garlic powder, and dried thyme all over.

Sear the Pork
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloin and sear for about 3-4 minutes on each side until browned.

Roast the Pork
Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

Make the Glaze
While the pork is roasting, combine the apricot preserves, Dijon mustard, and apple cider vinegar in a small saucepan. Heat over medium-low heat, stirring until smooth and heated through.

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow leaves. Halve them if they are large.

Roast the Brussels Sprouts
In a bowl, toss the Brussels sprouts with olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the oven at 400°F (200°C) for about 20 minutes, or until golden and crispy.
