Prepare the Chicken

Marinate the Chicken
In a bowl, combine olive oil, garlic powder, salt, and black pepper. Add the chicken breasts and coat well with the marinade. Let marinate for at least 30 minutes.

Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and allow to rest for 5 minutes before slicing.
Prepare the Salad Base

Chop the Vegetables
While the chicken is grilling, wash and chop the mixed greens, cherry tomatoes, cucumber, and red onion. Place them in a large salad bowl.
Make the Balsamic Vinaigrette

Combine Ingredients
In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, honey, salt, and black pepper until well combined. Adjust seasoning to taste.
Assemble the Salad

Combine and Serve
Slice the grilled chicken and add it on top of the salad base. Drizzle with balsamic vinaigrette and toss gently. Serve immediately.
