Prepare the Romaine
Wash the romaine lettuce thoroughly under cold water. Drain and dry with a salad spinner or paper towels. Chop the romaine into bite-sized pieces and place it in a large salad bowl.

Add Parmesan and Croutons
Grate the Parmesan cheese and sprinkle it over the chopped romaine. Add the croutons to the bowl.

Make the Dressing
In a small bowl, combine the minced garlic, chopped anchovy fillets, egg yolk, Dijon mustard, and lemon juice. Whisk together until smooth.

Emulsify the Dressing
Slowly drizzle in the olive oil while continuously whisking until the dressing is thick and creamy. Season with salt and black pepper to taste.
Combine and Serve

Toss the Salad
Pour the prepared dressing over the salad ingredients in the bowl. Toss gently to combine until the lettuce is coated with the dressing, and the cheese and croutons are evenly distributed.
