Method
Prepare the Salad
- 1
Wash and dry the romaine lettuce thoroughly. Chop into bite-sized pieces and place in a large salad bowl.
Make the Croutons
- 2
Preheat the oven to 375°F (190°C).
- 3
Cut the French bread into small cubes, about 1 inch in size.
- 4
In a mixing bowl, toss the bread cubes with olive oil, garlic powder, and salt until evenly coated.
- 5
Spread the croutons on a baking sheet in an even layer and bake for 10-15 minutes, or until golden brown and crispy.
Prepare the Dressing
- 6
In a food processor or blender, combine the anchovy fillets, garlic, Dijon mustard, lemon juice, and Parmesan cheese. Blend until smooth.
- 7
With the processor running, slowly drizzle in the olive oil until the dressing is fully emulsified. Season with salt and black pepper to taste.
Assemble the Salad
- 8
Drizzle the prepared Caesar dressing over the chopped romaine lettuce and toss until evenly coated.
- 9
Add the homemade croutons and toss gently to combine.
- 10
Top the salad with shaved Parmesan cheese before serving.
