Bruschetta Topping Preparation

Prepare the Tomatoes
Dice the fresh tomatoes and place them in a mixing bowl.

Add Basil
Chop the fresh basil leaves and add them to the bowl with the tomatoes.

Add Mozzarella
If using larger mozzarella, dice it into small cubes and add to the mixture.

Season the Mixture
Drizzle in the extra virgin olive oil, balsamic vinegar, salt, and black pepper. Stir gently to combine.

Let it Marinate
Set the mixture aside to allow the flavors to meld for about 15 minutes.

Slice the Bread
Cut the baguette or Italian bread into 1/2 inch thick slices.

Toast the Bread
Preheat the oven to 400°F (200°C). Arrange the bread slices on a baking sheet and brush each slice with extra virgin olive oil.

Add Garlic Flavor
Toast in the oven for 5-7 minutes or until golden brown, then rub the toasted slices with a cut garlic clove for added flavor.
Assembly

Top the Bread
Spoon the tomato, basil, and mozzarella mixture generously onto each toasted slice of bread.

Serve the bruschetta immediately while the bread is still warm.
