1. Prepare the Seafood
Thoroughly rinse the Dungeness crab legs, shrimp, clams, and oysters under cold water to remove any sand or debris. For the lobster, place it in a large pot of boiling salted water and cook for about 10-12 minutes or until it turns bright red. Remove and let cool.
2. Prepare Cocktail Claws
To make the cocktail claws, mix chipotle mustard with mayonnaise in a bowl. Adjust the seasoning to taste. Set aside.
3. Arrange the Tower
On a large platter or serving dish, start arranging the seafood. Begin with the Dungeness crab legs as the base layer, followed by the shrimp and clams in the middle layer, and finally, place the lobster and oysters on the top tier. Serve the cocktail claws with chipotle mustard aioli on the side.
