Preparation

    Prepare the Romesco Sauce

    In a blender, combine roasted red peppers, almonds, garlic, smoked paprika, olive oil, and red wine vinegar. Blend until smooth and set aside.

    Roast the Potatoes

    Preheat the oven to 400°F (200°C). Toss baby potatoes with olive oil, rosemary, and salt. Spread on a baking sheet and roast for 25-30 minutes or until golden brown.

Cooking the Scallops

    Sear the Scallops

    Heat olive oil in a large skillet over medium-high heat. Season the scallops with salt and black pepper. Add scallops to the pan and cook for 2-3 minutes on each side until golden brown and opaque. Remove and keep warm.

Sautéing Spinach and Mushrooms

    Cook the Spinach and Mushrooms

    In the same skillet, add olive oil and sauté the mushrooms for 3-4 minutes until soft. Add spinach and cook until wilted, about 2 minutes. Season with salt and pepper.

Plating

    Serve

    On a plate, place a scoop of romesco sauce, arrange the scallops on top, add a side of roasted potatoes, sautéed spinach, and mushrooms. Crumble smoked feta over the dish before serving.
