1. Prepare the Grits
In a large saucepan, bring 4 cups of water to a boil. Slowly whisk in the grits and reduce heat to low. Cook the grits for about 20-25 minutes, stirring occasionally, until they are thick and creamy. Stir in the cheddar cheese until melted. Season with salt and pepper to taste.
2. Cook the Bacon
In a skillet over medium heat, cook the chopped Benton’s bacon until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.
3. Sauté the Shrimp
In the same skillet with the bacon fat, add minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp and cook until they turn pink, about 3-4 minutes. Stir in the minced chipotle pepper.
4. Make the Gravy
Add the chicken broth to the skillet with the shrimp and chipotle. Bring to a simmer and cook for an additional 2-3 minutes. Season with salt and pepper to taste.
5. Combine and Serve
Serve the creamy grits in bowls, topped with the shrimp and chipotle gravy. Sprinkle crispy bacon and chopped green onions on top.
