    Prepare the Oysters

    Preheat the oven to 400°F (200°C). Carefully shuck the oysters and place them on a baking sheet with the deep side facing up.

    Make the Topping

    In a skillet, melt the butter over medium heat. Add minced garlic, and sauté for 1 minute until fragrant. Add the chopped watercress, parsley, and Pernod. Cook for an additional 2-3 minutes until the watercress is wilted. Season with salt and pepper.

    Assemble the Oysters

    Spoon the watercress mixture evenly over each oyster. Drizzle a small amount of Hollandaise sauce over the top of each oyster, followed by a sprinkle of bread crumbs.

    Bake the Oysters

    Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the oysters are cooked through and the tops are golden brown.

    Serve

    Remove from the oven and let cool slightly before serving. Enjoy your Oyster Rockefeller immediately!
