Prepare the Potatoes
Preheat the oven to 400°F (200°C). Wash the fingerling potatoes and cut them in half lengthwise. Toss with 1 tablespoon of olive oil, salt, and black pepper. Place them on a baking sheet and roast for 25-30 minutes or until golden and tender.

Cook the Steak
Season the NY Strip steak with salt and black pepper on both sides. Heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Add the steak and sear for 4-5 minutes on each side for medium-rare, or adjust the time for your preferred doneness. In the last minute of cooking, add crushed garlic and fresh rosemary to the pan for added flavor.

Finish the Dish
Once the steak is cooked to your liking, let it rest for about 5 minutes before slicing. While resting, reheat the broccolini in the same skillet for 1-2 minutes. To serve, place the sliced steak on a plate, arrange the roasted fingerling potatoes and broccolini alongside, and drizzle with demi glace.
