Lobster Bisque Preparation

    Make Lobster Stock

    In a large pot, add the lobster shells and water. Bring to a boil, then reduce the heat and simmer for about 30 minutes. Strain the stock and set aside.

    Sauté Vegetables

    In the same pot, melt the butter over medium heat. Add the chopped onion, carrot, celery, and garlic. Sauté until the vegetables are softened.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for 2 minutes. Then, add the dry white wine and simmer for another 5 minutes.

    Combine with Stock

    Pour in the lobster stock and bring to a gentle simmer. Let it cook for 15 minutes.

    Blend the Mixture

    Using an immersion blender or a regular blender, blend the mixture until smooth. Return to the pot.

    Add Cream and Seasoning

    Stir in the heavy cream, cayenne pepper, salt, and black pepper to taste. Heat gently until warmed through.

    Serve

    Ladle the bisque into bowls and garnish with fresh parsley before serving.
