    Caramelize the Onions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes. Set aside.

    Prepare the Portabella Mushrooms

    Remove the stems from the portabella mushrooms and brush both sides with olive oil. Season with salt and pepper.

    Grill the Mushrooms

    Preheat the grill to medium-high heat. Grill the portabella mushrooms for about 5-7 minutes on each side, or until tender and grill marks appear.

    Cook the Riced Cauliflower

    In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Add the riced cauliflower and cook for about 5 minutes, stirring occasionally. Add the sundried tomatoes and spinach, cooking until the spinach wilts.

    Assemble the Dish

    Place the grilled portabella mushrooms on a plate. Spoon the riced cauliflower mixture on top of each mushroom. Drizzle with balsamic vinegar and top with caramelized onions.
