Directions to Prepare Flounder Cassoulet

    Prepare the Cassoulet Base

    In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.

    Add Tomatoes and Beans

    Stir in the canned diced tomatoes, white beans, vegetable broth, thyme, bay leaf, salt, and black pepper. Bring to a simmer and cook for about 15-20 minutes, stirring occasionally.

    Cook the Collard Greens

    Add the chopped collard greens to the pot and continue to simmer for another 10 minutes, until the greens are tender.

    Prepare the Flounder

    Season the flounder fillets with salt and pepper. In a separate skillet, heat a little olive oil over medium-high heat and cook the flounder for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily.

    Serve

    Ladle the cassoulet into bowls, place the cooked flounder on top, and serve with chow chow on the side.
